Natural Coffee (Dry Process)

Natural processing is one of the oldest and most straightforward methods in coffee production. Following harvest, the entire fruit, referred to as cherries, is laid out in the sun on drying patios or raised beds. During this natural drying process, the pulp and outer skin gradually desiccate, forming a tough husk. Once fully dried, the husk is carefully removed, unveiling the coffee beans within.

In addition to coffee production, the farm also stands out for the preservation of its lush nature. The stunning landscapes and local biodiversity are testaments to the families commitment to sustainability and environmental preservation. At Fazenda Santa Helena, each cup of coffee tells the story of a family tradition rooted in a passion for quality and nature. 

Renewable Energy: They have installed a photovoltaic power plant (solar energy) that produces 100% of the electricity used on the property. This clean energy also powers their coffee roasting facility, distributor, offices, and even residences in the local municipality.

Water Conservation: The farm has over 30 protected water springs within its boundaries. These springs have been fenced off since the current owner's grandfather's time to ensure long-term water security for production.

Land Preservation: They maintain Permanent Preservation Areas (APP) to protect the native Atlantic Forest biome surrounding their water sources.

Responsible Chemical Use: The farm practices rational use of agricultural pesticides, applying them only at the exact recommended moment and in precise quantities to minimize environmental impact.
