Located in the heart of Acevedo, Huila, the Peñas Blancas Central Washing Station is a collaborative project founded by producers Néstor Lasso and Jhoan Vergara—two of the most influential young voices in Colombia’s new generation of coffee innovators.

Peñas Blancas was established with a clear vision: to expand access to high-quality processing and create greater opportunity for local producers. By providing the infrastructure and expertise needed for advanced post-harvest processing, the project helps farmers achieve better prices, greater stability, and broader recognition for their coffees in international markets.

More than just a processing facility, Peñas Blancas has become a center for education, experimentation, and community growth. Producers are able to learn and apply innovative processing techniques while benefiting from consistent, traceable, and standardized protocols that protect quality and transparency at every stage.

Each lot begins with flotation, followed by a carefully monitored fermentation of approximately 40 hours and a thorough washing. This rigorous protocol is designed to highlight clarity, sweetness, and balance in the final cup.

Throughout the process, temperature and pH are closely controlled, while slow, even mechanical drying helps preserve the coffee’s character and integrity. At Peñas Blancas, the goal is not for technology to replace tradition, but to work alongside it—supporting producers while allowing the true expression of origin to shine.
