A Family Farm Built on Curiosity
The story of Fazenda Jaguara began in 2001, when agronomist and researcher Antonio Wander, alongside two fellow agronomists, planted coffee for the first time on the farm.
From the beginning, Jaguara was built around a spirit of learning. With backgrounds in agriculture and research, the team approached coffee production with curiosity and a desire to better understand how farming practices, the environment, and processing decisions could influence the final cup.
In 2013, Antonio passed the responsibility of the farm to his son, André Luiz, and Natália. Together, they began a new chapter for Jaguara—one focused on innovation, sustainability, and continually exploring new ways to produce exceptional coffee while respecting the natural resources around them.
Exploring What Coffee Can Become
Located in Campo das Vertentes, a historic region of Minas Gerais known for its rich landscapes and agricultural heritage, Fazenda Jaguara spans 90 hectares and specialises in naturally processed coffees.
The farm's natural coffees are known for their sweetness, with expressive notes of chocolate and plum that reflect both the region and the careful attention given throughout the production process.
For André and Natália, quality comes from constant observation and experimentation. They believe that every harvest provides an opportunity to learn something new, and this mindset has led them to explore different fermentation techniques and processing methods.
From anaerobic and aerobic fermentations to experiments using barrels, polypropylene bags, drying boxes, and fermentation tanks, Jaguara continues to push the boundaries of what is possible while maintaining respect for the coffee itself.
Innovation Rooted in Sustainability
The team's approach is not simply about creating unique flavours. It is about understanding the relationship between the coffee plant, the environment, and every decision made after harvest.
Sustainable planting techniques allow Jaguara to make thoughtful use of natural resources while maintaining a healthy ecosystem for future generations. Their work reflects a balance between innovation and responsibility—embracing new ideas while remaining connected to the land.
This dedication to quality and exploration gained international recognition in 2019, when one of Jaguara's micro-lots placed among the top coffees in Brazil's Cup of Excellence competition, receiving an outstanding score of 90.47 points.
For the team at Jaguara, however, recognition is not the destination. It is simply part of the ongoing journey to better understand coffee and continue improving year after year.
