The coffees are processed at the Testi Coffee washing station, established in 2014 and operated in partnership with the Yonis family, with both NOP and EU Organic certifications. Lots from the region include Hadeso, Gigesa, Guji Faysel Abdosh, Dambi Uddo, and Guji Shakisso.\u003c\/p\u003e\n\u003cp\u003eQuality begins long before processing. Freshly harvested cherries are delivered daily to the station, where they are carefully hand-sorted to remove underripe, overripe, and damaged fruit, along with any foreign material. The cherries are then placed into flotation tanks, where density separation helps identify the highest-quality lots — dense, healthy cherries sink, while lower-density cherries are removed before drying begins.\u003c\/p\u003e\n\u003cp\u003eFollowing sorting, the selected cherries are briefly rested under shade before being evenly spread across raised African drying beds in thin layers to encourage steady airflow and even moisture reduction. Throughout the drying period, the coffee is continuously monitored and turned several times each day to maintain consistency and prevent over-fermentation.
